You can describe yourself however you want to. Here are some ideas of what you might want to include in your description, with a few pointers from myself:
Name- Be original. Only thing allowed from the books is common ones like "Luke" or "Martin", as long as you are only using the name (not the character) but nothing like "Boorab" or "Rawnblade"
Gender- Male or female. Animals are not transexuals.
Age- Whatever you like, just no dibbuns.
Species- Any species found in the books is allowed. As for others...if you absolutely must be different, try to keep the animal common to Britain, and one we might find in the world. No lions or bears or horses, (and especially no dragons or unicorns) but most rodents are allowed. If you are unsure where yours fits in, you can ask, and if it's a strange, uncommon one, make sure to have a picture handy.
Appearance- A little known fact among the ROC - Redwall animals like rodents do not actually have blue or green or purple eyes. Or, for that matter, strangely coloured fur. But hey, we can bend the rules. Just...nothing strange like green fur and rainbow eyes. Use some common sense here.
Equipment- Clothing and weapons are all yours to determine.
Temperment- Try your best to be original and keep away from cliches (although sometimes it is fun to play one of those cliches.) It's up to you, really.
History- It's up to you if you want to have one. Make it interesting. Try to avoid cliches again.
And whatever else you can think of.
You DON'T have to include all of these if you don't want to. Only whatever you think is essential for us to know.

It might be wise to update your description every now and then - in my experience many characters change as they are used and developed.
